To date, Snooze An A.M. Eatery has already established 46 locations all over the country, most of which are in Denver.

They use responsibly sourced ingredients only from Snooze-approved partners passionate about the same goals: healthy food, sustainable agriculture, and animal welfare. They only choose the best of the season ingredients, organic, non-GMO, and no artificial preservatives. Their ingredients and the ones their partners use must meet the same standards before ever getting served in one of their restaurants. They also partner with Global Animal Partnership (GAP), Rainforest Alliance, USDA Organic, B Corp, and their internal HACCP program to assure the people of the safety of their food.

I have to tell you, they serve a LOT of vegan meals and custom platters, and you can even simply filter the menu on their website out of allergens and specifically vegan or vegetarian. So, I’ll do my best to lay out their vegan menu so you can follow through.

I also have to inform you that Snooze admits that since their dishes are commonly prepared on the same kitchen surfaces and devices, they cannot guarantee the absolute absence of other allergens and contaminants, but you can check that out with your server. The presence of other allergens, as well as the nutritional and caloric values, vary depending on your choice of fillings and add-ons. So always ask your server for a wholesome vegan variation, and they’ll serve you as best they can.

Tofu Scramble

This dish is typically served with onion powder, salt, and pepper, then some hash browns and a choice of toast with organic jam or tortilla. You can choose up to three different fillings, including the sauce. Be sure to ask for a vegan toast.

Hash Browns

Snooze signature hash browns garnished with parsley and cooked to crisp perfection. Serves 240 cal, 3 g protein, 33 g carbs, and 11 g total fat.

Fresh Fruit

A bowl of mixed, fresh fruit best of the season. Serves 80 cal, 1 g protein, 20 g carbs, and 0.5 g total fat.

Soyrizo

Grilled, responsibly sourced soyrizo crumble. Serves 190 cal, 15 g protein, 12 g carbs, and 8 g total fat. Served like a patty.

Tofu

Tofu seasoned with onion powder, salt, and pepper. Serves 200 cal, 22 g protein, 6 g carbs, and 9 g total fat. Served in flaked pieces.

What Can Be Veganized

The Snooze Classic

Request for no eggs and choose soyrizo as your protein. Typically served with hash browns and a choice of toast with jam or tortilla, but you can also swap any of them with a pancake that you prefer for an upcharge. They have vegan pancakes, which we’ll get to later on.

Spuds Deluxe

Modifying this dish takes a lot of calories away. Commonly served with hash browns blanketed with melted cheddar and jack cheeses, scallions, two choice enhancements, and two cage-free eggs. Simply remove the cheeses and eggs, and you can still pretty much enjoy the hash browns and your two choice fillers.

Garden Harvest Omelet

Comes with three cage-free eggs and sautéed asparagus, mushrooms, zucchini, and red bell peppers. Then topped with chili-lined avocado, goat cheese, citronette dressing, spiced pepitas, and parmesan cheese. To modify, simply have the eggs and cheeses removed.

Citronette dressing is a variation of vinaigrette with vinegar replaced with citrus juice like lemons or limes. Spiced pepitas are special, roasted pumpkin-spiced seeds which are also a seed allergen.

Bravocado Toast

Rustic bread toasted with olive oil, smashed avocado, red onion, honey jam, and roasted tomato. Topped with two cage-free sunny-side-up eggs with a side dijon citronette, spiced pepitas, and parmesan-dressed greens. The toast has dairy and egg-free options, the red onion honey jam can be replaced with a fruit-based jam, and the eggs and parmesan can be removed to flip this dish into a 100% vegan breakfast. It can be paired with a fresh fruit mix for a sweeter value and an additional charge.

Sweet Potato Veggie Smash Up

Griddled, smashed sweet potatoes, a cage-free poached egg, avocado, pickled onions, and paprika, drizzled with black pepper maple syrup and topped with asparagus mushroom salad and hemp seeds. The poached egg can be removed and serves around 430 cal.

Hemp seeds are very nutritious for the body, according to Medical News Today. They come from the Cannabis sativa plant and are rich in protein, fiber, healthy fatty acids, and other important minerals and vitamins. The seeds have antioxidant effects and improve brain, heart, bone, and skin health. Just three tablespoons of these are packed with about 10 g of protein and are very low in fat and carbs. The healthy unsaturated fatty acids, however, make 12 g worth.

Vegan Bliss Pancakes

House-made vegan pancakes with coconut and almond milk, vanilla, and banana. Topped with fresh strawberries and blueberries and finally drizzled with Slopeside Pure Vermont Maple syrup. These are the only vegan pancakes on the Snooze menu and are egg and dairy-free but contain gluten, nuts, and soy allergens. They can also be switched into other vegan selections for the toast or tortilla, and sometimes the hash browns, but they cost more.

Sandwich I Am

A truly fitting name to a sandwich that can be modified to your needs. A soft pretzel roll filled with scrambled cage-free eggs, cheddar cheese, and a sausage patty served with a side of smoked cheddar hollandaise. Veganize it by ordering without eggs, cheese, and hollandaise and replacing the sausage patty with soyrizo patty instead. The pretzel roll can be made vegan but may contain gluten. Ketchup is available.

Snooze Breakfast Burrito

Flour Tortilla filled with cage-free scrambled eggs, hash browns, house black beans, cheddar, and jack cheeses. Topped with Pico de Gallo and a choice of green chile or ranchero. You can ask for a vegan tortilla and to remove the eggs, cheddar, and cheese. Green chile is your vegan option for sauce.

Smashed Avocado Benny

Snooze signature English muffin topped with fresh smashed avocado, Parmesan cheese, ripened tomatoes, two poached cage-free eggs, smoked cheddar hollandaise, and everything spice. The muffin can be made vegan but may contain gluten. No cheese, eggs, or hollandaise would make this ideal for vegans. Plant-based add-ons would save you an extra charge. Also served with hash browns.

Juan’s Breakfast Tacos

Three fresh corn tortillas topped with cage-free scrambled eggs, hash browns, jack cheese, green chile hollandaise, and pico de gallo. The organic corn tortillas are gluten-free while removing the eggs, cheese, and hollandaise makes the tacos completely vegan. Scallions and chile-lime seasoning are also present.

Scramble Eggs & Toast for Kids

An ample portion is suitable for young kids. Without the scrambled eggs, it serves a choice of toast with jam, hash browns, fresh seasonal fruits, and a choice of fruit juice.

Other Sides

One Side Taco

A one-piece open taco with the same ingredients as the regular breakfast tacos. Order without the cheese, eggs, and hollandaise.

Two Slices of Toast

Comes in white, wheat, rye, sourdough, English muffin, or gluten-free variants. Serves 60 – 270 cal, depending on the type.
